Pesto bruschetta is a modified form of bruschetta with pesto sauce, olives and cheese. It is an ideal weekend snack when you want to play with your taste-buds. It is best served with pasta.
I came up with this recipe a few months ago. I was craving for pesto pizza (I will be posting this one shortly) but was in no mood to bake a pizza. I used brown bread and added the ingredients I felt like having. It did turn out like a substitute for pizza. Tastes amazing with pasta (red or white).
The versatility of this dish is that it can be made with or without baking. The choice is yours.
Ingredients
- Brown bread
- Pesto sauce
- Onion
- Tomato
- Olives
- Cheese
Method
- Cut the bread slices into halves.
- Spread pesto sauce
- Add chopped onion, tomato and olives
- Top them with grated cheese.
Fresh bruschettas are ready
For the baked bruschettas, bake in the oven for 10-15 minutes at 200 ºC.
Remove and serve immediately.
